This beautiful Chickpea Summer Salad combines all of my favorite fresh vegetables in one delicious bite. This is the perfect make ahead dish as this salad keeps for days! A super power salad that is so satisfying and delicious!

Ingredients
- Avocado - 1
- Fresh lemon juice - 1/2
- Chickpeas - 1 can ( drained )
- Sliced onion - 1/4 cup
- Grape / cherry tomatoes - 1 1/5 cup, sliced
- Diced cucumber - 1 1/5 cup
- Green bell pepper - 1/2 cup, diced
- Parsley - 1/2 cup, chopped
For the dressing
- Red wine vinegar - 1 1//5 tbsp
- Olive oil - 1 1/5 tbsp
- Cumin powder - 1/2 tsp
- Salt to taste
- Pepper to taste
Instructions
- Cut avocado into cubes and place in bowl. Squeeze the juice from 1/2 lemon over the avocado and gently stir to combine.
- Add remaining salad ingredients and gently toss to combine.
- Refrigerate at least one hour before serving.
Notes
- You can add or omit any veggies of your choice.

How to make Chickpea Summer Salad step by step photo:
