Vegetable Fritters

These crispy vegetable fritters are quick and easy to make and are a great way to sneak some extra veggies into your diet. They make a great lunch or snack and I promise you will not be able to stop at one! Do give it a try!

Ingredients
- Cabbage - 1/2 cup, finely chopped
- Spinach - 1/2 cup, finely chopped
- Broccoli - 1/2 cup, finely chopped
- Zucchini - 1/2 cup, grated (squeeze out the moisture)
- Carrots - 1/4 cup, grated (squeeze out the moisture)
- Onions - 1/4 cup, finely chopped
- Mozzarella cheese - 1/4 cup, grated
- Chickpea flour (Besan) - 1/4 cup
- Oat flour - 1/4 cup
- Salt - 1/2 tsp or to taste
- Black pepper - 1/2 tsp or to taste
- Chili flakes - 1/2 tsp
- Italian seasoning - 1/2 tsp, optional
- Oil - 2 tbsp to shallow fry the fritters
Instructions
- Place all the veggies, cheese, chickpea flour, oat flour, salt, black pepper, chili flakes, Italian seasoning in a clean mixing bowl and stir well to combine.
- Heat oil in a pan. Grease your palms with a little oil. Place around couple of tablespoons of a mixture in your palm, flatten it and make a round patty.
- Place it on the heated pan. Cook for 2-3 minutes each side until golden and crispy. Add little oil if needed. Serve immediately with sour cream or yogurt. Garnish with spring onions.
Notes
- Make sure you squeeze the excess moisture out by wringing the shredded zucchini and carrots with your hands. This will stop the fritters from being soggy.
- You can add couple of tablespoons each of chickpea flour and oat flour if your batter is still runny and not binding well.
- Cook the fritters in batches, about 3-4 at at a time so you don’t overcrowd your pan. Add more oil if it dries out completely.
- To make the oat flour, simply blend the oats in a blender.
