Sweet Corn Dosa

This dosa is indeed an irresistible option for breakfast, supper, snack or a sudden meal for a surprise guest or you can make these dosas any time you feel hungry as it can be prepared within minutes without much to do. Have these dosas fresh off the tava, and you will love the crisp yet soft feel of every bite.

Ingredients
- Yellow moong dal – 1 cup, soaked for 2 hrs
- Sweet corn kernels – 1 cup, boiled
- Spinach leaves – 1 cup
- Coriander leaves – 2 Tbsp, chopped
- Rice flour – 3 Tbsp
- Green chilies – 2
- Ginger – 1 inch piece
- Sugar – ½ Tsp
- Garlic – 1 clove
- Onion – 1, chopped
- Salt to taste
- Ghee/Oil/Butter – to smear on the dosa
Method to make the batter
- In a mixer grinder, grind the onion, green chilies, garlic, ginger and the boiled corn.
- After grinding a bit, add the soaked moong dal, sugar, spinach, coriander to the mixer grinder and grind well.
- Empty the smooth batter in a bowl.
- Add the rice flour and salt to the batter and mix well.
- Add little water to the batter to get the required consistency. Batter is ready.
Method to make the dosa
- Heat the pan for a few seconds. Add 1 Tsp of oil and wipe it with a paper towel. Take a spoonful of batter and spread it on the heated pan in a circular motion.
- Let it cook on a high heat. Once the batter dries out a bit, thin out the edges.
- Apply Ghee/Oil/Butter on the dosa.
- Rotate the pan a bit so that it is well cooked from all the sides.
- Serve the dosa hot with any chutney of your choice.
Notes
- You can stuff the dosas with potato masala, grated paneer or grated cheese or any veggie of your choice.
