Onion Vada / Ulli Vada

Here is an irresistibly crunchy and excitingly flavored vada made with onions. This tongue-tickling treat is just perfect to have with a cup of hot tea in the evening.

Ingredients
- Onion - 3, large (thinly sliced)
- Gram flour / Besan - 6 Tbsp
- Rice flour - 3 Tbsp
- Green chilies - 2, chopped
- Ginger - 1 inch piece, finely chopped
- Curry leaves - 7-8, finely chopped
- Turmeric powder - 1/2 Tsp
- Red chili powder - 1/2 Tsp
- Fennel seeds - 1 Tsp
- Cumin seeds - 1 Tsp
- Coriander leaves - 2 Tbsp, chopped
- Baking soda - 1 Tsp
- Salt to taste
- Oil for deep frying
Instructions
- In a mixing bowl add sliced onions, green chili, ginger, cumin seeds, curry leaves, coriander leaves, salt, turmeric powder, chili powder, baking soda, fennel seeds and mix well using your hands.
- Mix this really well so that the water from the onions starts to come out. After mixing this leave it aside for 5 mins.
- Add gram flour & rice flour a spoonful at a time and mix well.These vadas don’t need any water, the moisture from onions is enough for making the batter. If you need, just sprinkle few drops of water.
- Now heat a tablespoon of oil and pour it in the batter and mix well. This batter should be thick so that you can form vadas out of it.
- Heat oil for deep frying. Make small balls out of this mixture and drop in hot oil. Fry till they turn golden brown from all the sides. Repeat with the remaining batter to make more vadas.
- Drain on an absorbent paper and serve hot with chutney of your choice.
