Orzo looks like rice, but is a really fun pasta you can use in your salads. This salad is light, refreshing, delicious and perfect for picnics, potlucks, and backyard barbecues. Give it a try!

Ingredients for the dressing
- Red wine vinegar - 4 Tbsp
- Olive oil - 1/4 cup
- Garlic - 1 clove, crushed
- Salt to taste
- Fresh ground pepper - 1/2 Tsp or to taste
- Chili flakes - 1/2 Tsp, optional
- Oregano - 1 Tsp
Ingredients for the salad
- Orzo pasta - 1 cup, cooked according to package directions and drained.
- Chickpeas - 1 can, drained and rinsed
- Baby spinach - 1 cup, chopped
- Cherry or grape tomatoes - 1/2 cup, halved
- Kalamata olives - 1/4 cup, pitted and halved
- Feta cheese - 1/4 cup, crumbled
- Red onions - 1/2 cup, thinly sliced
Instructions
- Whisk together vinegar, garlic, oregano, salt, chili flakes (if using), ground pepper in a small bowl. Gradually whisk in the olive oil.
- In a large bowl, combine the orzo and the rest of the salad ingredients and toss to combine. Pour the dressing over and toss to coat all the ingredients.
Notes
- You can chill this salad before serving or can serve immediately.
