Masala Tindora Fry

It's a very simple and easy to make side dish which goes well with rice or roti

Ingredients
- Tindora - cut into thin slices lengthwise (around 3 cups)
- Mustard oil - 2 tbsp
- Mustard seeds - 1 tsp
- Cumin seeds - 1 tsp
- Asafoetida - 1/8 tsp
- Curry leaves - 8-10
- Dry red chili - 1-2
- Ginger - 1 inch piece ( cut into julienne)
- Green chili - 1 medium, cut into slices
- Salt - 1 tsp or to taste
- Cumin powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Red chili powder - 1/4 tsp
- Coriander powder - 1 tsp
- Raw mango powder ( Amchoor ) - 1 tsp
- Garam masala - 1/2 tsp
- Coriander leaves - 3-4 tbsp, chopped
Instructions
- Heat oil in a pan. Let it smoke. Add mustard seeds, cumin seeds, dry red chili and asafoetida. Let it splutter. Add ginger, green chilies and curry leaves. Let it sauté for 30 seconds.
- Add thinly slices tindora. Mix it well. Cover and cook for 3-4 minutes.
- In a small bowl, mix salt, cumin powder, red chili powder, turmeric powder, coriander powder and raw mango powder and mix it. Add the spices to the tindora. Mix and cover with a lid.
- Cook for 15-20 minutes, stirring occasionally, till cooked. Add garam masala and coriander leaves. Switch off the flame.
- Serve hot with any main course meal of rice or roti.
