Mango Semolina Cake

This unique Mango Semolina Cake is made with Sooji instead of plain flour, which is usually the main ingredient in cakes. That gives this cake an amazing crumbly texture and makes the total effect mind blowing. This recipe uses very little milk, so stick to the quantities mentioned, to get the batter consistency right.

Ingredients
- Semolina (Sooji/Rawa) - 1 cup
- Mango pulp - 1 cup (you can use the canned one as well)
- Powered sugar - 1/2 cup
- Milk - 2 Tbsp
- Baking soda - 1/2 Tsp
- Baking powder - 1 Tsp
- Vanilla essence - 1/2 Tsp
- Melted butter - 1/4 cup
- A pinch of Salt
- Melted butter for greasing
- Plain flour (Maida) for dusting
- Pistachios - 1/4 cup, roughly chopped
Instructions
- Pre-heat the oven to 180° Celsius.
- Grease a cake tin with melted butter, dust it with plain flour. Shake and remove the excess flour.
- Combine all the ingredients (except pistachios) in a deep bowl and mix well using a spatula.
- Pour the batter into a greased and dusted cake tin and spread it evenly.
- Cover it with an aluminum foil and keep aside for 1 hour.
- Remove the foil and garnish with chopped pistachios.
- Bake it in a pre-heated oven at 180° Celsius for 35 minutes.
- Allow it to cool for 15 minutes and demould.
- Cut into square pieces and use as required.
