M&M; and Oreo cookie bars
These are the best M&M; and Oreo cookie bars I have ever tasted! They have chewy, soft texture and are loaded with Oreo and M&M;'s. They are super easy to make and taste just fantastic. It's great recipe for kids. They will love it for sure.

Ingredients
  1. All purpose flour - 1 cup
  2. Brown sugar - 1/2 cup
  3. Unsalted butter - 1/2 cup ( melted)
  4. Egg - 1
  5. Vanilla extract - 1 Tbsp
  6. Oreo cookies - 12 roughly crushed
  7. M&M;'s - 3/4 cup
Instructions
  1. Preheat oven to 180 degrees centigrade.
  2. Line a square pan with parchment paper and grease lightly.
  3. Take melted butter in a bowl, add in sugar and whip till creamy.
  4. Add in egg and vanilla extract and mix until well combined.
  5. Add in flour, Oreo cookies and M&M;'s ( save some to garnish on top) and mix well.
  6. Spoon this in a parchment lined pan and spread evenly. Top with M&M;'s and Bake for 20-25 minutes.
  7. Remove it and cool completely.
  8. Cut into bar and serve.
Notes
  1. Keep an eye on it after 20 minutes. Mine exactly took 23 minutes to bake.
  2. Cool completely before cutting into bars.

Mango Semolina Cake
This unique Mango Semolina Cake is made with Sooji instead of plain flour, which is usually the main ingredient in cakes. That gives this cake an amazing crumbly texture and makes the total effect mind blowing. This recipe uses very little milk, so stick to the quantities mentioned, to get the batter consistency right.

Ingredients
  1. Semolina (Sooji/Rawa) - 1 cup
  2. Mango pulp - 1 cup (you can use the canned one as well)
  3. Powered sugar - 1/2 cup
  4. Milk - 2 Tbsp
  5. Baking soda - 1/2 Tsp
  6. Baking powder - 1 Tsp
  7. Vanilla essence - 1/2 Tsp
  8. Melted butter - 1/4 cup
  9. A pinch of Salt
  10. Melted butter for greasing
  11. Plain flour (Maida) for dusting
  12. Pistachios - 1/4 cup, roughly chopped
Instructions
  1. Pre-heat the oven to 180° Celsius.
  2. Grease a cake tin with melted butter, dust it with plain flour. Shake and remove the excess flour.
  3. Combine all the ingredients (except pistachios) in a deep bowl and mix well using a spatula.
  4. Pour the batter into a greased and dusted cake tin and spread it evenly.
  5. Cover it with an aluminum foil and keep aside for 1 hour.
  6. Remove the foil and garnish with chopped pistachios.
  7. Bake it in a pre-heated oven at 180° Celsius for 35 minutes.
  8. Allow it to cool for 15 minutes and demould.
  9. Cut into square pieces and use as required.

Nutella Swirl Banana Muffins
( Banana + Nutella = Match made in heaven ). These Nutella Swirl Banana Muffins are one of my absolutely favorite ways to use up overripe bananas. They also can be whipped up in under 30 minutes from start to finish. They are super delicious, moist and are perfect for breakfast. You can pack it for your kids lunch box as well. This recipe is a huge hit with my family. Do try it, I am sure you will love it.

Ingredients
  1. All purpose flour - 2 cups
  2. Baking soda - 1 Tsp
  3. Baking powder - 1 Tsp
  4. Salt - 1/2 Tsp
  5. Overripe Bananas - 4 Medium, mashed
  6. Granulated Sugar - 1/2 Cup
  7. Brown Sugar - 1/2 Cup
  8. Egg - 1 large
  9. Vegetable Oil - 1/4 Cup (I used Canola Oil)
  10. Vanilla extract - 2 Tsp
  11. Pecans - 1/4 Cup, chopped
  12. Nutella - 1 Tsp (for each muffin)
Instructions
  1. Pre-heat oven to 180° C/ 350° F. Line muffin pan with liners and lightly spray the liners with oil.
  2. In a medium bowl whisk flour, baking soda, baking powder & salt until well combined. Set aside.
  3. In a large bowl whisk together banana, granulated sugar, brown sugar. Beat in egg, vegetable oil and vanilla extract. Slowly whisk in the flour mixture, until there are no lumps. Fold in chopped pecans.
  4. Fill muffin tins 3/4 full. Top each muffin with about 1 Tsp of nutella and use a toothpick or knife to swirl it into the batter.
  5. Bake muffins for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Serve warm or store in an air tight container until ready to serve.
Notes
  1. Everybody's oven is different so keep an eye on it after 15 minutes. Mine exactly took 18 minutes.

Ingredients
  1. All purpose flour - 1 1/2 Cup
  2. Baking powder - 2 Tbsp
  3. Sugar - 3/4 Cup
  4. Salt - 1 Tsp
  5. Vegetable Oil - 1/2 Cup
  6. Vanilla Essence - 1 Tsp
  7. Zest of 1 Lemon
  8. Eggs - 3
  9. Yogurt - 1/2 Cup
Instructions
  1. Mix the lemon zest and sugar in a bowl, then add yogurt and vegetable oil to the mixture.
  2. Beat 3 eggs and add the vanilla essence into the mixture and mix well.
  3. In a separate bowl, combine the flour, baking powder and salt.
  4. Pour the dry ingredients into the batter and mix until there is a runny consistency.
  5. Pour the batter into a greased baking pan.
  6. Bake at 180 Degrees Celsius for 45 minutes or until a toothpick inserted into the cake comes out clean.
  7. Remove the cake and let it cool for 10 minutes.
  8. Serve with a cup of coffee or milk.

Pineapple upside down cake

Pineapple upside down cake

In case you haven’t heard, April 20 is the national pineapple upside down cake day. So why not celebrate this day with this gorgeous looking cake. Pineapple is a delicious fruit and when you add it and its juices to a cake then you’re bound to come out with a delicious treat! It’s a most famous and heavenly treat dessert to indulge in. The cake looks elegant but require very little effort and it’s super to make. It’s moist, light and perfect with a cup of coffee in the morning, or as a light dessert after dinner! The smell of baking just might make the neighbors beat your door down, so fair warning.

Ingredients for bottom layer
  1. Butter – 5 Tbsp + extra to grease the sides of the pan
  2. Brown sugar – ½ cup + 2 Tbsp
  3. Pineapple slices – 8- 10 (I used canned but you can use fresh also)
  4. Maraschino cherries – 8- 10
Ingredients for cake batter
  1. All purpose flour – 1 cup
  2. Plain yellow cornmeal – 2/3 cup
  3. Baking powder – ½ Tsp
  4. Baking soda – ¼ Tsp
  5. Salt – ½ Tsp
  6. Unsalted Butter – 1/3 cup, melted
  7. Granulated sugar – 1 cup
  8. Vegetable oil – 2 Tbsp
  9. Eggs – 2, large
  10. Pineapple syrup – 1/3 cup (I used the syrup from the can)
  11. Vanilla extract – 2 Tsp
  12. Water – 1/3 cup
Instructions
  1. In a pot, melt butter & brown sugar for bottom layer. Add it in the pan and make sure to spread it evenly. Butter the sides of the pan as well.
  2. Now layer pineapple slices over the butter and brown sugar mixture. Place the cherries in the middle of each pineapple slice. Keep it aside.
  3. For the cake batter, Take a deep bowl, using a hand mixture or stand mixture, mix granulated sugar, melted butter and oil. Add in eggs, vanilla, pineapple syrup and water. Mix until smooth.
  4. Now add salt, flour, baking soda and baking powder. Mix until well combined.
  5. Pour this batter over the pineapple slices and bake for 35 minutes uncovered. At 35 minutes, cover the pan with aluminium foil (to prevent over browning) and bake for another 15 minutes or until a toothpick inserted in the center comes out clean!
  6. Let it cool for 15 minutes in the baking pan on our counter. Run a knife around the cake edges so it comes out smoothly.
  7. Place a plate over it and flip it at once to transfer it to a plate.
  8. The cake is ready to serve with a cup of tea/coffee.

This banana walnut bread is the real deal folks! Super moist & fluffy on the inside and light golden crunch on the outside. Ingredients
  1. Whole wheat flour – 1 ½ cups
  2. Brown sugar – ½ cup
  3. Ripe banana puree – 1 cup
  4. Baking soda – ½ Tsp
  5. Baking powder – 1 ½ Tsp
  6. Butter – ¾ cup (at room temperature )
  7. Cinnamon – 1 Tsp
  8. Sunflower and pumpkin seeds (to sprinkle on top) optional
  9. Walnuts – ¾ cup, chopped
Instructions
  1. Preheat oven to 180 degrees C (350 degrees F). Butter the loaf pan and sprinkle some whole wheat flour & coat it nicely and shake off the excess. Set aside.
  2. First sift whole wheat flour, baking soda and baking powder. Set aside.
  3. Now take Butter, brown sugar and cinnamon in a bowl and mix well.
  4. Add in pureed bananas & mix well.
  5. Now add in flour mix and walnuts. Mix well to a smooth batter. The batter should be thick.
  6. Now pour this thick batter in a prepared loaf pan and bake this in a preheated oven for 40 to 45 minutes or until fully cooked through.
  7. Remove it from the oven & let it cool for 10 minutes.
  8. Now invert it to a plate and let it cool for 30 more minutes.
  9. Slice & serve with a cup of tea.

This is such a simple brownies made with just 3 ingredients. It will be consumed in minutes. This is the best & easiest brownie recipe I have made so far, with the crunchy top and soft interior. Do try it to get yourself the praises.

Ingredients
  1. Nutella - 1 ½ cup
  2. Eggs – 3
  3. Ground almonds – ½ cup
  4. A pinch of salt
Instructions
  1. Preheat your oven to 350 degrees F (180 degrees C). Line an 8*8” pan with parchment paper & spray well with non-stick spray and set aside.
  2. In a large bowl using a handheld electric whisk, whisk the eggs and salt until they are super thick and pale, about 3- 4 minutes.
  3. Heat up the Nutella for just about 20 seconds in the microwave to loosen it up a bit.
  4. Add the Nutella & ground almonds to the eggs, mix it well with the eggs and pour the mixture into a prepared pan & bake for about 30 minutes or until fully cooked through.
  5. Enjoy it with a cup of coffee or serve it with the scoop of your favorite ice cream.

Basic vanilla cake

Basic vanilla cake

Finding a good cake recipes can be really difficult. But if you found one, then the recipe has to be kept under lock and keys. This is one of my no fail, vanilla cake recipe. Sometimes I add tutti fruity or chocolate chips or even nuts in them and take it one step further. But my basic recipe is this one. Give it a try and let me know how it turns out for you!

Ingredients
  1. All purpose flour - 1 1/2 cup
  2. Sugar - 1 1/2 cup

  6. Yogurt - 60 ml
  7. Vanilla Essence - 1 Tbsp
  8. Baking powder - 1 Tsp

Instructions
  1. Preheat the oven to 180 Degree C. Grease the cake pan with butter well. Dust it with flour and coat on all sides, now tap off the excess flour and keep aside.
  2. Break the eggs in a bowl and keep aside. Strain flour, baking powder and salt using sieve in another bowl and mix well, keep aside. Mix milk and yogurt in a jug and keep this aside.
  3. Now take butter, sugar and vanilla essence in a large mixing bowl, use an electric beater to beat the mix till it is light and mixed properly.
  4. Add in 1 egg at a time and beat well.
  5. Add in half the flour mix and fold gently. Pour half the yogurt & milk mix and fold gently. Now add the remaining flour and curd milk mixture and fold well.
  6. Now pour the cake batter in a cake pan and bake it for 35 to 40 minutes, or until a skewer inserted comes out clean.
  7. Remove from oven and let it cool completely. Now invert the cake and cut into desired pieces.
  8. Cake is ready to enjoy.

Ingredients
  1. All purpose flour – ¾ cup
  2. Cocoa powder – 2 Tbsp
  3. Carrots – ¾ cup, grated
  4. Unsalted butter – ½ cup
  5. Condensed milk – ½ cup
  6. Honey – 2 Tsp
  7. Baking soda – ¼ Tsp
  8. Baking powder – ¼ Tsp
  9. Vanilla essence – ½ Tsp
  10. A pinch of salt
  11. Walnuts – 2 Tbsp, chopped
  12. Raisins – 2 Tbsp, optional
Instructions
  1. Combine all the ingredients in a deep bowl and fold gently into a smooth batter making sure that no lumps remain.
  2. Pour the batter into a greased and dusted loaf tin, pat the tin lightly so that the batter spreads evenly.
  3. Bake it in a pre-heated oven at 180 degree C (360 degree F) for 40 minutes.
  4. Cool it completely, loosen the edges using a knife and demould it by inverting the tin over a rack and tap gently to unmould the loaf.
  5. Cut into slices and serve immediately or store it in an air-tight container. Use as required.
Notes
  1. To test if the loaf is cooked, insert a knife or a skewer into a loaf. If it is cooked, the knife will come out clean.

Ingredients
  1. Whole wheat flour - 1 & 1/4 cup
  2. Banana - 2 (Large)
  3. Cocoa powder - 1/4 cup
  4. Sugar - 3/4 cup
  5. Oil - 1/3 cup ( I used canola oil, you can use butter too )
  6. Water - 1/3 cup + 1 Tbsp
  7. Baking soda - 1 Tsp
  8. Lemon juice - 1 Tsp
  9. Salt - a pinch
  10. Chocolate chips - 1/3 cup (keep some for sprinkling on top)
Instructions
  1. In a mixing bowl, mash well the peeled ripen banana with a fork. Add rest of the ingredients to it & mix well. Don't forget to strain the flour before adding to the batter.
  2. Preheat the oven at 180 deg C (350 F). Pour the batter into a greased pan.
  3. Sprinkle the chocolate chips and bake for 35 minutes or until a toothpick inserted in the middle of the cake comes out clean.
  4. Cool completely before taking out of the pan. Cut onto squares and serve.
  5. Cake is ready to serve.
