- Fresh pineapple - 1, medium sized, cut into roundels ( core removed)
- Sugar - 1/4 cup
- Salt to taste
- Black salt - 1/2 Tsp
- Cumin powder - 1 Tsp
- Red chili powder - 1/2 Tsp
- Black pepper powder - 1/2 Tsp
- Turmeric powder - 1/4 Tsp
- Dry mint powder - 1/2 Tsp
- Nutmeg powder - 1/4 Tsp ( optional )
- Lemon juice - 1 Tbsp
- Fresh pineapple and mint leaves for garnish
- Water as needed
- Grill the pineapple roundels on a grill pan for 2 minutes on each side or until you can see the beautiful grill marks.
- Remove from heat and let it cool.
- Chop the grilled pineapple. Transfer the pineapple in a pan. Add turmeric powder, cumin powder, black salt, black pepper, salt, red chili powder. Now add sugar, 1/4 cup of water, cover with a lid and let it cook on a medium flame for 10 minutes or until the pineapple is tender, while stirring occasionally. Add freshly grated nutmeg powder (if using). Switch off the flame and let it cool.
- Blend the chopped pineapple in a mixer till it's smooth.
- Transfer the mixer in a bowl, add dry mint and lemon juice. Stir well. The pineapple concentrate is ready.
- For serving, place few ice cubes in individual glasses, add 3-4 tbsp of concentrate pineapple mixture, pour a glass of water or sparkling water. Garnish with fresh pineapple and mint leaves.
- You can store the concentrate in an air-tight bottle for up to a month.
