The interestingly named starter is a traditional Sindhi delicacy, made of baby potatoes. This is sure to take your taste buds on an enjoyable roller coaster ride!

Ingredients
- Baby potatoes - 2 cups ( unpeeled )
- Oil to deep fry
For the masala powder
- Salt - to taste
- Chili powder - 1/2 Tsp
- Coriander powder - 1/2 Tsp
- Raw mango powder (amchoor powder) - 1/2 Tsp
Instructions
- Wash the baby potatoes and wash them very well. Boil the potatoes till it’s 3/4 done or 1 whistle. Transfer the potatoes in a bowl. Let it cool.
- Heat oil in a deep pan. Press each boiled potato between the palms of your hands to flatten them and deep fry in a hot oil till they turn golden brown from all the sides. The potato skin will be slightly crispy. Drain on an absorbent paper.
- Transfer them into a deep bowl. Add the masala powder and toss well.
- Serve immediately.
Notes
- Make sure to add the masala powder when it’s hot, otherwise they won’t stick well to the potatoes.
- Press the boiled potatoes gently or they can break while frying.
- You can squeeze lemon juice on Tuks before serving.

How to make Aloo Tuk step by step photo:
1. Take 6 Cups of Water in a pressure cooker.

2. Add 15-20 Baby Potatoes

3. Boil the Potatoes till 1 whistle.

4. For the masala mixture take 1 tsp coriander powder.

5. Add 1/2 Tsp Red Chili Powder.

6. Now add 1 Tsp Amchur Powder.

7. Add Salt to Taste.

8. Mix it well.

9. Press the potatoes gently with palm of your hands.

10. Deep Fry the smashed potatoes in hot oil until golden brown and crisp.


11. Take potatoes in a bowl and add the masala mixture.

12. Toss the potatoes in the masala mixture.

13. Serve Hot!
